Moong Dal Khichdi

Moong Dal Khichdi is a complete meal in itself. Made with rice and lentils, khichdi is healthy, wholesome and a comfort food. This recipe is also gluten-free. It can be made vegan by replacing the ghee with oil.

Ingredients

  • 60 g Sona Masoori Rice (washed and soaked)
  • 40 g Moong Dal Split (washed and soaked)
  • 3 tbsp Ghee (divided)
  • 1 medium Onion (quartered)
  • 5 cloves Garlic (peeled)
  • 1 Green Chilli (stem removed)
  • 50 g Potato (cubed)
  • 50 g Cauliflower (florets)
  • 100 g Frozen Peas
  • 1 medium Tomato (chopped)
  • 820 ml Water
  • Spices: Cumin, Cinnamon, Hing, Turmeric, Chili Powder, Coriander Powder, Salt (as per taste)

Instructions

Prepare the base

Add 2 tbsp ghee, cumin seeds, cinnamon stick, hing, quartered onion, green chilli, and garlic to The Upliance jar.

Chop and Sauté

The device will now chop the aromatics and sauté them on medium heat for 6 minutes to release the flavors.

Cook the Khichdi

Add the soaked rice, dal, potatoes, cauliflower, peas, tomato, powdered spices, and water. The Upliance will cook the mixture on medium heat for 28 minutes with automatic stirring.

Garnish and Serve

The dish is ready. Garnish with the remaining 1 tbsp of ghee and fresh coriander leaves before serving.
