
Moong Dal Khichdi is a complete meal in itself. Made with rice and lentils, khichdi is healthy, wholesome and a comfort food. This recipe is also gluten-free. It can be made vegan by replacing the ghee with oil.
First, soak the washed Moong Dal and Sona Masoori Rice with 400ml water for 1 hour. Then, add 2 tbsp Ghee, 2 tbsp Refined Oil, 0.5 tsp Cinnamon Stick, 0.5 tsp Jeera, 0.25 tsp Hing, 1 piece Onion (cut into four), 1 piece Green Chilli (stem removed), and 5 cloves Garlic (peeled) to The Upliance jar.
The Upliance will now chop the aromatics for 10 seconds. Then, it will sauté the tempering spices and aromatics in the jar for approximately 7 minutes on medium heat, with automatic stirring, until fragrant.
Repeat the above by adding the pre-soaked Moong Dal and Sona Masoori Rice, 50 g washed Frozen Peas, 50 g Potato (cut into cubes), 100 g trimmed Cauliflower, 420 ml Water, 1 tsp Kashmiri Mirch, 1 tsp Coriander Powder, 0.25 tsp Turmeric, 1.5 tsp Salt, and 1 piece cut Tomato to The Upliance jar.
The Upliance will now cook the Khichdi for approximately 28 minutes on medium heat with automatic stirring, ensuring all ingredients are perfectly tender. Once cooked, the dish is ready. Garnish with 1 tbsp Ghee and 2 stem minced Coriander Leaves before serving.
