What is it?

Pick spinach, cube paneer
How much knife work?
The slow bit is the spinach: wash 300 g twice, trim the roots and pull off the thick stems (about 7 minutes). Then peel 8 garlic cloves, peel 1½ onions and cut them in 4, pull the stem off 1 green chilli, halve 2 tomatoes and cut 200 g paneer into cubes. No fine chopping: the jar does that. The garlic, onion and paneer can wait till the spinach is boiling.

What goes in
All 300 g of the cleaned spinach and 600 ml water. upliance weighs it as it lands. Lid and crown on.

Why boil first?
upliance boils the spinach for about 5 minutes, stirring it under so every leaf wilts dark green. No pot to watch. Peel the garlic and onions and cube the paneer meanwhile.

Drain it in a sieve
Then what?
Lift the jar off and tip the spinach into a big sieve. Let the water drain away and leave the spinach in the sieve to cool. The jar is empty again, ready for the tadka.

2 tbsp refined oil, 1 tsp jeera and ¼ tsp hing, straight into the empty jar.

No knife?
No knife, no onion tears. The blade turns the garlic, onion and chilli into fine confetti in about 10 seconds. Scrape the sides down once it stops.

Do I stir?
No. Crown off so the moisture escapes, and upliance sautés the aromatics for about 3 minutes, stirring by itself, till they turn soft and golden.

Meanwhile, squeeze the spinach
Why squeeze?
While the aromatics sauté, the spinach in the sieve has cooled enough to handle. Squeeze it in your fist to push out the extra water, so the gravy stays thick and green instead of watery.

What goes in
The squeezed spinach, 2 tomatoes (halved), garam masala 1 tsp, salt ¾ tsp, coriander powder ½ tsp, turmeric ¼ tsp and amchur ¼ tsp. Lid and crown on.

What goes in
First fit the blade cover over the blade, so the paneer stays in whole cubes. Then add 200 g paneer cubes and 60 ml water. Lid and crown on.
