Egg Curry

Boiled eggs cooked in spicy onion tomato masala gravy. This Kerala Egg Roast / Nadan mutta roast without coconut is one of the easy and tasty side dishes that you prepare very quickly. Mostly served for breakfast with Appam(Rice and Coconut pancake)/Roti.

Ingredients

  • 4 pieces Egg
  • 700 g Water (for boiling)
  • 130 g Onion (cut into quarters)
  • 10 cloves Garlic
  • 1 piece Green Chilli
  • 2 tbsp Ghee
  • 10 leaves Curry Leaves (washed)
  • 130 g Tomato (cut into halves)
  • 0.5 tsp Turmeric Powder
  • 0.25 tsp Kashmiri Mirch
  • 2 stem Coriander Leaves (minced)

Instructions

Boil the eggs

Add eggs and 700g water to The Upliance jar. The device will boil the eggs on medium heat for 12 minutes. Remove eggs, peel them, and set aside.

Chop and sauté aromatics

Add onions, garlic, and green chili to the jar. The device will now cut the vegetables. Add ghee and curry leaves. The device will sauté on low heat for 9 minutes with automatic stirring.

Prepare the gravy

Add tomatoes, spices, and remaining water to the jar. The device will cook the masala on medium heat for 7 minutes. Add boiled eggs. The device will simmer on low heat for 4 minutes.

Garnish and serve

The dish is ready. Garnish with fresh minced coriander leaves and serve hot with Appam or Roti.
