
Minty Spinach khichdi is a great alternative to the common khichdi recipe with just a couple of ingredients. This dish can be served in breakfast, lunch and dinner. Pair with raita and pickle
First, soak 140g Sona Masoori Rice in 450ml Water for 1 hour and set aside. Then, add 2 tbsp Ghee, 0.5 tsp Jeera, and 0.25 tsp Hing to The Upliance jar. Select sauté mode at medium heat for 1 minute for tempering. Add 1 piece Green Chilli (stem removed), 10 cloves Garlic (peeled), and 130g Onion (quartered) to the jar. The Upliance will now cut these aromatics for 10 seconds.
The Upliance will now sauté the aromatics at low heat for 5 minutes with automatic stirring until golden. Then, add 0.75 tsp Garam Masala, 0.5 tsp Coriander Powder, and 0.75 tsp Salt. Add 200g Spinach and 30 cleaned Mint Leaves to the jar. The Upliance will cut the greens for 15 seconds, then cook them at low heat for 5 minutes with automatic stirring.
Repeat the above by adding the previously soaked Sona Masoori Rice and 380ml Water to The Upliance jar. The device will now cook the khichdi at low heat with automatic stirring for approximately 32 minutes until the rice is tender and the khichdi has a consistent texture.
The dish is ready! Transfer the Pudina Palak Khichdi to a serving bowl and garnish with 0.5 tbsp Ghee. Serve hot with raita and pickle for a complete meal.
