Outside of The Upliance, wash 50 g medium tapioca pearls twice and soak them in 40 ml water for 2 hours. Once soaked, add 1 tbsp ghee, 20 g chopped almonds, and 20 g chopped cashews to The Upliance jar. Select sauté mode and set to medium heat (around 95°C) for 90 seconds with automatic stirring to temper the dry fruits.
Add 400 g soaked tapioca pearls, 80 ml TetraPak milk, 12 tsp sugar, and 0.75 tsp green cardamom powder to The Upliance jar. The device will now cook the sabudana. Set the Upliance to medium heat (around 95°C) and stir at a low speed for 2 minutes to gently combine.
Repeat the above with the Upliance, continuing to cook on medium heat (around 95°C) with automatic stirring for 8 minutes. Then, reduce to low heat (around 90°C) and simmer for another 12 minutes to allow the payasa to thicken and become creamy.
The delicious Sabudana Payasa is now ready. Carefully transfer from The Upliance jar to a serving bowl. You can serve it chilled or hot, garnished with extra dry fruits if desired.
