Add 3 tbsp refined oil, 150g roughly chopped onion, 1 green chilli (stem removed), 10 cloves peeled garlic, and 3g peeled ginger to The Upliance jar. The device will automatically cut the garlic and chillies for 10 seconds.
The Upliance will now sauté the aromatics on medium heat for 90 seconds. Then, add 90g chopped tomato, 60g butter, 1.25 tsp salt, 0.5 tsp kashmiri mirch, 1.5 tbsp pav bhaji masala, 1 tsp turmeric, and 1 tsp amchur powder to The Upliance jar. The device will sauté the mixture on medium heat with automatic stirring for 5 minutes, ensuring the spices are well tempered.
Repeat the above by adding 80g trimmed and chopped cauliflower, 120g peeled and chopped potato, 40g peeled and chopped carrot, 40g frozen peas, 40g chopped capsicum, 40g peeled and chopped beetroot, and 400ml water to The Upliance jar. The Upliance will cook the vegetables on medium heat with automatic stirring for 10-16 minutes. After cooking, the device will automatically mash the vegetables for 10 seconds to a smooth consistency. Add 1 tbsp lemon juice and continue cooking on medium heat for another 10 minutes.
The dish is ready! Add 10g butter, 6 stems minced coriander leaves, and 20g hand-chopped onion to The Upliance jar for garnish. Toast 4 sliced pav pieces on a separate pan with 5g butter. Serve the hot Pav Bhaji immediately.
