
Gobhi, gajar and matar ki sabzi is very popular in north India, this is a winter staple because carrots (gajar) and peas(matar) are freshly available in winter. This recipe is mildly spiced. Pair with Roti/Paratha
Add 2 tbsp refined oil, 0.5 tsp jeera, 0.75 tsp hing, 10 washed curry leaves, 5 g peeled ginger, and 1 piece green chilli (stalk removed) to The Upliance jar. The Upliance will automatically chop the ginger and green chilli, then sauté these ingredients on medium heat for 1 minute with automatic stirring.
The Upliance will now add 0.5 tsp Kashmiri mirch, 0.25 tsp turmeric, 0.75 tsp salt, and 1.5 tsp coriander powder to the jar. Then, add 100 g trimmed cauliflower, 100 g prepped carrots, 50 g washed frozen peas, and 80 ml water to The Upliance jar. The device will then begin cooking the vegetables with spices.
Repeat the above by letting The Upliance continue to cook the sabzi on medium to low heat for approximately 17 minutes with automatic stirring, ensuring the vegetables are tender and well-mixed with the spices.
The Gobhi, Gajar, and Matar Sabzi is ready. Garnish with 2 minced stems of coriander leaves and serve hot with Roti or Paratha.
