    • 0.25 tsp turmeric
    • 1.5 tbsp Pav Bhaji Masala (divided)
    • 1 tsp Amchur powder
    • 1.25 tsp salt
    • 300ml water
    • 45g butter (divided)
    • 6 stems coriander leaves (minced, divided)

    Hariyali Pav Bhaji is a delightful vegetarian street food dish from India, known for its vibrant green color and rich flavors. Made with a medley of mashed vegetables cooked in a spiced tomato-based gravy. This wholesome and delicious dish is perfect for satisfying your cravings and adding a burst of color to your plate! Pair with buttery Pav (buns)

      Add 1 piece onion (cut into four), 1 green chilli (stem removed), 10 peeled garlic cloves, and 2 tbsp refined oil to The Upliance jar. The device will automatically chop these ingredients, then sauté them on medium heat for 3 minutes.

      Cook Tomatoes and Initial Spices

      Next, add 1 piece tomato (cut into two) to The Upliance jar. The device will sauté the tomatoes with the aromatics on medium heat for 5 minutes, followed by a brief blend. Then add 0.5 tsp Kashmiri Mirch, 0.25 tsp turmeric, 1 tbsp Pav Bhaji Masala, 1 tsp Amchur powder, and 1.25 tsp salt. The Upliance will automatically stir these spices for 15 seconds.

      Simmer and Mash Bhaji

      Now, add 100g trimmed, cut, and washed cauliflower, 120g peeled potato, 30g peeled and cut carrot, 60g washed frozen peas, 150g washed spinach, 300ml water, and 30g butter to The Upliance jar. The device will simmer the mixture on medium heat for 8 minutes, followed by an automatic mashing process on medium heat for 12 minutes to achieve the perfect bhaji consistency.

      Your Hariyali Pav Bhaji is ready! Garnish with 10g butter, 4 minced coriander stems, and 20g handchopped onion. Serve hot with pavs roasted on a pan with 5g butter, 2 minced coriander stems, and 0.5 tsp Pav Bhaji Masala.
