Add diced ridge gourd, garlic, ginger, green chili, refined oil, mustard seeds, jeera, hing, and salt to The Upliance 2.0 jar. Select sauté mode at 120°C for 10 minutes until the aromatics are fragrant. The Upliance 2.0 will automatically stir.
Add tamarind paste and coriander powder to The Upliance 2.0 jar. Select the ‘Cooking Ridge Gourd’ preset. The Upliance 2.0 will automatically cook the ridge gourd at 95°C for 240 seconds followed by 900 seconds, ensuring even cooking and automatic stirring.
Remove the cooked mixture from The Upliance 2.0 jar. In a separate pan on the stove, prepare the tempering by sautéing curry leaves in refined oil for 1 minute on high flame. Transfer the cooked ridge gourd mixture back into the jar.
The Upliance 2.0 will automatically stir the mixture for a final 10 seconds at 20°C. Add the tempering to the chutney. The Ridge Gourd Chutney is ready to serve. Pair with Steamed Rice/Chapati
