    Ingredients

    • 3 tbsp refined oil
    • 0.5 tsp jeera
    • 0.5 tsp mustard seeds
    • 0.25 tsp hing
    • 3 g ginger (peeled)
    • 1 piece green chilli (stem removed)
    • 5 cloves garlic (peeled)
    • 1 piece tomato (cut in two)
    • 0.5 tsp kashmiri mirch
    • 0.25 tsp turmeric
    • 0.75 tsp salt
    • 0.5 tsp garam masala
    • 0.5 tsp coriander powder
    • 1 tsp jaggery powder
    • 200 g small brinjal (washed)
    • 150 g potato (diced)
    • 200 ml water
    • 2 stem coriander leaves (minced)

    Instructions

    Gobhi, gajar and matar ki sabzi is very popular in north India, this is a winter staple because carrots (gajar) and peas(matar) are freshly available in winter. This recipe is mildly spiced. Pair with Roti/Paratha

      Add initial spices and aromatics

      Add 3 tbsp refined oil, 0.5 tsp jeera, 0.5 tsp mustard seeds, and 0.25 tsp hing to The Upliance jar. Then add 3 g peeled ginger, 1 piece green chilli (stem removed), and 5 cloves peeled garlic. The Upliance will chop these ingredients for 8 seconds.

      Sauté aromatics and add powdered spices

      The Upliance will now sauté the whole spices and aromatics on medium heat for 60 seconds with automatic stirring. Next, add 1 piece tomato (cut in two), 0.5 tsp kashmiri mirch, 0.25 tsp turmeric, 0.75 tsp salt, 0.5 tsp garam masala, 0.5 tsp coriander powder, and 1 tsp jaggery powder. The Upliance will continue cooking this mixture on medium heat for 30 seconds with automatic stirring.

      Cook vegetables to perfection

      Repeat the above by adding 200 g washed small brinjal, 150 g diced potato, and 200 ml water to The Upliance jar. The device will cook the sabzi on low heat for 10 seconds to mix, then on medium heat for 2 minutes to bring to a simmer, and finally on low heat for 18 minutes with automatic stirring, ensuring all vegetables are tender.

      The dish is ready! Garnish the delicious Ringana Bateta Nu Shaak with 2 stems minced coriander leaves and serve hot with Roti or Paratha.
