    Ingredients

    • 3 g Ginger (peeled)
    • 4 g Split Urad Dal (washed)
    • 2 Dried Red Chilli (stem removed)
    • 2 tbsp Groundnut Oil
    • 3 tbsp Refined Oil
    • 30 g Carrot (peeled and cut)
    • 0.5 piece Onion (cut in two)
    • 30 g Cabbage (shredded)
    • 30 g French Beans (trimmed and cut)
    • 30 g Red Pumpkin (peeled and cubed)
    • 30 g Small Brinjal (washed)
    • 0.5 piece Capsicum (cut in four)
    • 20 g Chow Chow (peeled and cubed)
    • 1 piece Tomato (chopped)
    • 4 stems Coriander Leaves (root cut)
    • 0.75 tbsp Tamarind Paste
    • 1.5 tsp Salt
    • 0.5 tsp Mustard Seeds
    • 4 leaves Curry Leaves (washed)
    • 0.5 tsp Hing

    Instructions

    Karivepaku Podi (Curry Leaves Powder, Karuveppilai Podi) is a South Indian condiment (dry chutney powder) that brings together the refreshing flavor of curry leaves and spices. Pair with a Rice, Dosa, or Idlis

      Add initial ingredients for roasting

      Add 2 tbsp Groundnut Oil, 2 tbsp Refined Oil, 4 g Washed Split Urad Dal, 2 Stem Removed Dried Red Chilli, and 3 g Peeled Ginger to The Upliance jar. Select sauté mode with automatic stirring at low heat for 30 seconds.

      Prepare tadka and blend vegetables

      After the initial roast, add 1 tbsp Refined Oil, 0.5 tsp Mustard Seeds, 4 Washed Curry Leaves, and 0.5 tsp Hing to The Upliance jar. The Upliance will make tadka on low heat with automatic stirring for 30 seconds. Then, add all the chopped vegetables (30g Carrot, 0.5 piece Onion, 30g Cabbage, 30g French Beans, 30g Red Pumpkin, 30g Small Brinjal, 0.5 piece Capsicum, 20g Chow Chow, 1 piece Tomato, 4 stems Coriander Leaves), 0.75 tbsp Tamarind Paste, and 1.5 tsp Salt. The device will now blend the vegetables for 10 seconds.

      Cook the Thuvayal to perfection

      The Upliance will now sauté the blended Thuvayal on low heat with automatic stirring and scraping for a total of approximately 30 minutes, ensuring all ingredients are well cooked and flavors are combined.

      The Veg Thuvayal is ready to serve

      Remove the freshly cooked Veg Thuvayal from The Upliance jar into a bowl. Serve this delicious condiment with rice, dosa, or idlis.
