Chicken Tajine

This recipe is a traditional Moroccan dish of chicken braised with spices, garlic, onion, olives, and lemon juice. Chicken is slow-cooked with green olives to create a burst of flavors which is enhanced by parsley. Pair with rice/bread or naan

Ingredients

  • 3 tbsp Pomace Olive Oil
  • 2 inches Cinnamon Stick
  • 0.75 tsp Cinnamon Powder
  • 10 cloves Garlic (peeled)
  • 5 g Ginger (peeled)
  • 4 pieces Onion (cut in quarters)
  • 1 Green Chilli (stem removed)
  • 450 g Chicken - Biryani Cut
  • 2 tsp Kashmiri Mirch
  • 0.75 tsp Coriander Powder
  • 1 tsp Garam Masala
  • 2 tsp Jeera Powder
  • 0.5 tsp Salt
  • 12 pieces Green Olives
  • 90 ml Water
  • 0.5 tbsp Lemon Juice (squeezed)
  • 2 stems Parsley (chopped)

Instructions

Add aromatics to jar

Add garlic, ginger, onion quarters, green chilli, olive oil, cinnamon stick, and cinnamon powder to The Upliance jar.

The device will now cut and sauté

The Upliance will chop the ingredients for 10 seconds at speed 6. Then, it will automatically switch to sauté mode on low heat for 3 minutes to temper the aromatics.

Add chicken and ingredients to cook

Add the chicken, spices (Mirch, Coriander, Garam Masala, Jeera, Salt), green olives, water, and lemon juice. The device will sauté the chicken for 10 minutes on low heat, then slow-cook the Tajine for 23 minutes with automatic stirring.

The dish is ready

Once the cooking cycle is complete, garnish with chopped parsley. Serve hot with rice or naan.
