This recipe is made with tender and small eggplant in a peanut and coconut-based gravy. The recipe mainly hails from Andhra cuisine or Telugu cuisine but is popular among other South Indian states too. Pair with Roti/Rice

Add 3 tbsp oil, 3 minced green chillies, 6 peeled garlic cloves, and 1 cut onion to The Upliance 2.0 jar. Select sauté mode at 120°C for 5 minutes until onions turn translucent.
The Upliance 2.0 will now cook the brinjal at 100°C for 14 minutes with automatic stirring. Add 2 cut brinjals, 1 tsp turmeric powder, 20g roasted peanuts, 1 tsp coriander powder, 0.75 tsp Kashmiri Mirch, 0.75 tsp garam masala to the jar.
Remove the cooked brinjal to a bowl. Add 1 cut tomato and 60ml water to the jar. The Upliance 2.0 will now cook at 95°C for 12 minutes with automatic stirring. Add the cooked brinjal back to the jar.
The Upliance 2.0 will stir for a further 7 minutes at 95°C. Garnish with 2 stems of minced coriander leaves and serve hot with roti or rice.
