
This recipe is made with tender and small eggplant in a peanut and coconut-based gravy. The recipe mainly hails from Andhra cuisine or Telugu cuisine but is popular among other South Indian states too. Pair with Roti/Rice
Add raw peanuts, dried red chilli, white sesame seeds, methi seeds, and jeera to The Upliance jar. The Upliance will roast these spices on low heat for 10 minutes with automatic stirring. Then, it will grind them into a paste for 40 seconds. Manually transfer the paste to a bowl and stuff into the prepared brinjal.
Add groundnut oil, curry leaves, mustard seeds, and hing to The Upliance jar. The Upliance will sauté these spices on medium heat for 30 seconds with automatic stirring. Next, add the manually stuffed brinjal to the jar. The Upliance will sauté the brinjal on low heat for 2 minutes with automatic stirring.
Add the remaining spice paste (from step 1), coriander powder, turmeric, salt, tamarind paste, and 120ml water to The Upliance jar. The Upliance will cook this mixture with the brinjal for 10 minutes on low heat. Separately, add garlic, onion, grated coconut, and 60ml water to The Upliance jar and blend into a smooth paste for 60 seconds. Combine this newly blended paste with the brinjal mixture in the jar, add 40ml water, and let The Upliance simmer the gravy on low heat for 17 minutes with automatic stirring.
The dish is now ready. Garnish with fresh minced coriander leaves and serve hot.
