    Ingredients

    • 500 g Mutton - Curry Cut
    • 200 ml Water
    • 1 piece Bay Leaf
    • 4 pieces Clove
    • 6 g Whole Black Peppercorns
    • 1.75 tsp Salt
    • 2 inches Cinnamon Stick
    • 3.5 tbsp Ghee
    • 1 tsp Jeera
    • 2 pieces Black Cardamom
    • 1 piece Dried Red Chilli (removed stem)
    • 4 pieces Onion (cut into quarters)
    • 1 piece Green Chilli (removed stem)
    • 10 cloves Garlic (peeled)
    • 5 g Ginger (peeled)
    • 0.5 tsp Sugar
    • 20 stems Coriander Leaves (roots removed, for paste)
    • 1 piece Coriander Leaves (for garnish)
    • 60 g Grated Coconut
    • 1 tsp Kashmiri Mirch
    • 2 tsp Coriander Powder
    • 1 tsp Garam Masala
    • 0.25 tsp Turmeric
    • 50 g Mutton Stock

    Instructions

    Satara special kharda mutton is a green masala recipe with fresh green chilies and coriander leaves. It's a dry dish, but can be made into gravy. The freshly ground masala adds a fantastic twist with spicy flavors. Garam masala can be skipped for a milder taste. Pair with Steamed Rice

      Prepare the Masala Base

      Add Ghee, Jeera, Black Cardamom, and Dried Red Chilli to The Upliance jar. The Upliance will then sauté these on low heat for 30 seconds to temper. Next, add quartered Onion, Green Chilli (stem removed), peeled Garlic, peeled Ginger, Coriander Leaves (roots removed), Grated Coconut, and Sugar to the jar. The Upliance will automatically chop these ingredients for 27 seconds to form a coarse paste.

      Sauté the Masala Paste

      The Upliance will now sauté the prepared masala paste on low heat with automatic stirring for 6 minutes until it turns fragrant and releases its oils, ensuring a perfectly cooked base for your mutton.

      Combine and Cook the Mutton

      Add Kashmiri Mirch, Coriander Powder, Garam Masala, Salt, Turmeric, the pre-boiled Mutton pieces, and Mutton Stock to The Upliance jar. The Upliance will combine these ingredients and then cook the mutton with the masala on low to medium heat with automatic stirring for approximately 30 minutes, allowing the flavors to meld perfectly.

      The Dish is Ready

      Once cooked, the Satara Special Karda Mutton is ready. Garnish the dish with a drizzle of fresh Ghee and freshly chopped Coriander Leaves before serving.
