Vangi Bhath is a rice dish popularly made in the Maharashtrian and Karnataka cuisine. This is a simple one pot vegan recipe of spiced brinjal rice. Pair with Curd/Raita
Add refined oil, mustard seeds, hing, curry leaves, red chillies, and peanuts to The Upliance jar. The device will sauté the spices on medium heat for 30 seconds to release the aromas.
Add the cut brinjal, turmeric, sugar, salt, Vangi Bath powder, Sambar powder, and 100ml water to The Upliance jar. The device will cook the vegetable mixture on low heat for approximately 12 minutes with automatic stirring.
Add the washed Sona Masoori rice and the remaining 420ml water to The Upliance jar. The device will simmer the dish on low heat for about 22 minutes until the rice is fluffy and fully cooked.
The Vangi Bhath is ready. Add a teaspoon of ghee and garnish with minced coriander leaves. Serve hot from The Upliance jar with a side of curd or raita.
