Pesto Pasta

A new take on traditional winter pesto pasta made from parsley and peanuts instead of basil and pine nuts. Parsley pesto is a great and more affordable version of the traditional basil pesto. Pair with Toasted Bread

Ingredients

  • 160 g Spaghetti (broken in half)
  • 700 ml Water
  • 1.75 tsp Salt
  • 3 Dried Red Chilli (stems removed)
  • 10 cloves Garlic (peeled)
  • 4 tbsp Pomace Olive Oil
  • 50 leaves Basil (washed)
  • 70 g Parsley (washed, trimmed)
  • 70 g Coriander Leaves (roots cut)
  • 30 g Roasted Salted Peanuts
  • 2 tbsp Cheese Cube

Instructions

Boil the pasta

Add spaghetti, water, and 1 tsp salt to The Upliance jar. The device will boil the pasta on low heat for 13 minutes with automatic stirring. Once done, strain the pasta and reserve 70ml of pasta water.

Prepare the aromatics

Reuse the jar without rinsing. Add dried red chillies and garlic. The device will chop them finely. Add olive oil, and The Upliance will sauté the aromatics on low heat for 30 seconds.

Blend pesto and mix

Add basil, parsley, coriander, peanuts, and cheese to the jar. The device will blend the pesto. Add the reserved pasta water and boiled spaghetti. The device will mix the pasta with the sauce on low heat for 3 minutes.

The dish is ready

Transfer the Pesto Pasta from The Upliance jar to a bowl. Garnish with parmesan cheese powder and serve hot with toasted bread.
