
Khaman dhokla is a popular Gujarati snack made from fermented gram flour batter. The batter is spiced with green chilies, ginger, and turmeric, then steamed until light and fluffy. Once cooked, it is tempered with mustard seeds and curry leaves for added flavor
Add 100 g Besan Flour, 20 g Suji, 2 Green Chillies (removed), 5 g Ginger (peeled & grated), 0.75 tsp Salt, 50 g Curd, and 150 ml Water to a bowl and mix well until no lumps remain. Then, add 0.75 tsp Eno and mix lightly. Grease a mold with 1 tbsp Refined Oil and pour the batter into it. Separately, add 500 ml Water to The Upliance jar for steaming.
Assemble the external steamer basket with the batter mold on The Upliance jar. The Upliance will now steam the dhokla for 30 minutes on medium heat with automatic stirring, ensuring it becomes light and fluffy.
Once the dhokla is steamed, carefully remove the steamer basket. Add 1 tbsp Refined Oil, 2 tsp Mustard Seeds, 0.5 tsp Jeera, 0.25 tsp Hing, and 20 Curry Leaves (washed) to The Upliance jar. The Upliance will sauté these spices on medium heat for 1.5 minutes with automatic stirring. Then, to the clean Upliance jar, add 300 ml Water and 5 tsp Sugar to cook the sweet syrup on medium heat for 10 minutes with automatic stirring.
Dice the steamed dhokla into desired pieces. Pour the prepared flavorful tempering and sweet syrup evenly over the dhokla. Allow the dhokla to soak in the flavors for a few minutes for a better experience. The SteamUp Dhokla is now ready to be served, fresh and delicious.
